104 Cobs of Heavenly Sweet Corn

So, here in Vermont, we have local farmers who grow corn. Lots of corn. Sweet corn. Heavenly tasting, fresh-picked-that-very-day corn. If you have never had fresh-picked corn, you are truly missing out on one of life’s best.

A few weeks ago, when I had family visiting, we stopped by the local farm to pick up some fresh corn for dinner. YUM! And then just a few weeks later, I went by to get some more corn and WHOA! There was a nice sign out front that said CLOSED!! Yikes! It couldn’t be! I couldn’t have missed the entire corn harvest!?! . . . → Read More: 104 Cobs of Heavenly Sweet Corn

CLEAN Round 2, Day 1

It’s time for CLEAN again! This time, I am committed to getting through the entire 21 days with minimal hiccups! I really want to know what food(s) might be causing my digestive issues once and for all!

It was a pretty uneventful day, coming off of my 3 day fast (I actually ended up with 3 1/2 days).

The fast, by the way, was wonderful and very spiritually enriching (I would highly recommend reading the book Fasting by Jentezen Franklin if you want to learn more about fasting for spiritual reasons), as always. And, I am praising God for some . . . → Read More: CLEAN Round 2, Day 1

Dr. Laura’s Tasty Tuesday – Lentil Chicken Quesadillas with Homemade Guacamole

As part of the CLEAN program (today is round 2, day 1), I have learned to experiment with several dishes to create something new.

As a background, I LOVE quesadillas. I am the quesadilla queen and could probably write a book about the different quesadillas of the world and rank them all.

However, pretty much the entire quesadilla (minus the chicken and guacamole) is entirely off the list of okay foods during the clean program.

So, I took the lentil dish recipe, and a recipe for brown rice quesadillas I found on the CLEAN forum, . . . → Read More: Dr. Laura’s Tasty Tuesday – Lentil Chicken Quesadillas with Homemade Guacamole

Menu Plan Monday – August 23

It’s really hard to believe that the summer is nearly over and children are starting school soon (or, in some cases, have started already!).

And, since it is the end of the summer, that also means lots of canning and preserving too, so I am thankful for the freezer stocked full of good food to eat.

This also makes it easier for me, too, since I will be on the CLEAN program, which is entirely different food. This means I don’t have to worry about cooking much, because I already have several things stocked in . . . → Read More: Menu Plan Monday – August 23

Processing Potatoes

This year in the garden we planted potatoes. Five small starter potatoes. That grew taller, and taller, and then finally created a potato “wall” in the middle of the garden (making it a bit hard to get to the other side to weed!).

I wasn’t sure what I would find when I dug up the new potatoes, but, to my great surprise they had multiplied! A lot.

What to do with all those potatoes?

I had the brilliant idea of making homemade french fries.

That was, until I started making them.

Let me tell you that making homemade french . . . → Read More: Processing Potatoes

Fasting and CLEAN

As I have been reading through the Bible in 90 Days, there have been some eye-opening moments for sure! And, my heart has been burdened for several things. So, I’ve decided to do a 3 day fast. I’ve fasted before (a great book is Fasting by Jentezen Franklin) and I fast only for spiritual reasons.

Fasting, for me, is a time of denying one’s self, and coming before the Lord, laying all of your troubles at His feet. Every time my stomach growls, I pray. Every time I think of food, I pray. Every time I prepare food for my . . . → Read More: Fasting and CLEAN

Frugal Friday – Homemade Laundry Detergent

For the past year, I have made and used homemade laundry detergent.

I first saw this idea when watching an episode of 19 Kids and Counting with the Duggar Family on TLC (I think it was back when it was only 17 Kids and Counting at that point). One of the episodes was sharing how the Duggars save money. Since they do a lot of laundry, one of the best ways for them to save was to make their own homemade laundry detergent. Hmmm…that’s a concept.

Later, when reading the Duggar’s book The Duggars: 20 . . . → Read More: Frugal Friday – Homemade Laundry Detergent

Canning 101

So this year, since I planted a nice garden, I decided I would finally learn how to can. I’ve had the Ball Blue Book on my shelf for years, and had never cracked it. I also ordered a nice set of canning tools and another recipe/preserving book from Ball: The Ball Complete Book of Home Preserving (which has lots of nice recipes, whereas the Blue Book is just quick instructions on canning, freezing, dehydrating, etc.). Of course, you also need to stock up on many jars too (I would recommend getting some quart size, some pint size, and if you . . . → Read More: Canning 101

I’m Booking It!

As I was reading at LifeAsMom.com the other day, I came across an older post from earlier this year with a book reading challenge. Ahhh…this is right up my alley. So what if I am already 8 months into the year, right?

So, I got to thinking. I have definitely read several books this year, and remember most of them, so I thought I would try to recap what I’ve read so far in 2010, and what I’ve got on tap. Then, I’ll be all caught up with the Booking It challenge.

I always have a goal to read . . . → Read More: I’m Booking It!

New Blog Design

Well, it’s been a little while since I’ve posted. Partly because I have been out of town surprising my father for his 60th birthday (all six kids together (the last time was 5 years ago), and he had no idea!), and partly because I have been working on revamping this blog with the goal of making it more user friendly and readable.

I’ll be posting more soon, because I have loads to tell you about my first canning experience using a pressure canner, as well as our first batch of sourdough starter, the butterfly experiment, and my journey back into . . . → Read More: New Blog Design
