My first step toward a healthier breakfast sandwich was to start making them at home.
A friend of mine introduced me to white spelt buttermilk biscuits and I fell in love. These melt in your mouth and are just the best way to enjoy a breakfast sandwich (or any kind of jelly, etc.) in the morning. Now, I also use local cheese and pastured eggs to increase the nutrient content of my breakfast sandwich, but I am still a sucker for sausage. I do use turkey sausage sometimes, and I’ve also tried the breakfast sandwiches with other meats like turkey slices or chicken breasts. All combos are good, but they start with the scrumptious spelt buttermilk biscuit.
Here’s the recipe:
Spelt Buttermilk Biscuits
2 cups white spelt flour
1 tbsp baking powder
¼ tsp baking soda
2 tsp sugar
½ tsp cream of tartar
¼ tsp salt
½ cup butter
¾ cup buttermilk
Preheat oven to 450. Stir dry ingredients and cut in butter until mixture resembles course crumbs. Add buttermilk all at once and mix until dough clings together. On a floured surface, knead dough 10-12 times and roll to ½ inch thick. Cut into circles and bake 10-12 min.
