Okay, so I am super excited about the newest addition to my kitchen library – Mark Bittman’s How to Cook Everything. I must thank Alex @ A Moderate Life and Christy @ Frugality and Crunchiness with Christy for encouraging me to add this wonderful book (really, it’s a huge book!) to my repertoire.
And, I am very excited to also be joining Alex @ A Moderate Life and Christy @ Frugality and Crunchiness with Christy for the TACKLING BITTMAN Recipe Blog Hop on the first Thursday of each month! This is open to anyone interested in “tackling” the Bittman recipes.
Since there are…uh…2,000 or so recipes in the Bittman cookbook, I was not sure where to start! There were so many yummy choices that jumped out at me, but since I am starting The Allergy Experiment, I thought I would try something with lentils in it.
I have a new found love for lentils, having tried them for the first time in the CLEAN program, and so I looked for lentils, and behold, on page 431 in How to Cook Everything there was not one, not two, but SIX ways to cook lentils!
So, I chose two. I made a few minor tweaks and then had a taste test!
Bittman’s Basic Lentils
2 tbsp EVOO
1/2 onion, chopped
4 celery hearts, chopped
1 carrot, chopped
2 cloves fresh garlic, pressed
1 bay leaf
1/2 white cooking wine
2 cups vegetable broth
1 cup green lentils (could use other kinds)
sea salt
fresh cracked pepperHeat oil over medium-high heat in a skillet for a minute. Add chopped onion, celery and carrot. Saute for a few minutes, add garlic and saute for another minute. Add bay leaf, wine, broth, and lentils, and bring to a boil. Reduce heat and cook partially covered 30-40 minutes until liquid is absorbed and lentils are tender. Add salt and pepper to taste. Enjoy!
Bittman’s Lentils with Parsnips
2 tbsp EVOO
1/2 onion, chopped
2 cups parsnips, chopped
1 bay leaf
1/2 white cooking wine
2 cups vegetable broth
1 cup green lentils (could use other kinds)
sea salt
fresh cracked pepper
1/4 cup heavy cream
dash of nutmegHeat oil over medium-high heat in a skillet for a minute. Add chopped onion and parsnips. Saute for a few minutes. Add bay leaf, wine, broth, and lentils, and bring to a boil. Reduce heat and cook partially covered 30-40 minutes until liquid is absorbed and lentils are tender. Add salt and pepper to taste. Stir in heavy cream, and top with a dash of nutmeg. The verdict??
Well, I enjoyed all of the lentil dishes, and each gave it’s own particular flavor. Here’s my favorites in order:
- CLEAN Lentil Dish
- Bittman’s Basic Lentils
- Bittman’s Lentils with Parsnips
I think part of the reason that I like the CLEAN Lentils is because of the brown rice. But, the flavors of both of Bittman’s Lentils was really good. Next time I would adjust Bittman’s Lentils to be 1/2 cup short grain brown rice and 1/2 cup green lentils. Otherwise, was super easy and yummy!

That is a terrific cookbook. I’m working my way through the bean section. I made the lentils with carmelized onions a few weeks ago, and it’s the first one I haven’t liked. I think it just made so much that I got really tired of eating it! I’m glad your lentils came out better.
