This week I am sharing a yummy recipe for apple muffins. This is based on a recipe from the Make a Mix cookbook (and my friend Patti), and then topped with additional butter/cinnamon/sugar goodness.
Cinnamon Apple Muffins
Muffin Mix (from Make a Mix cookbook)
8 cups all purpose flour
3 cups sugar
3 tbsp baking powder
2 tsp salt
2 tsp ground cinnamon
2 tsp ground nutmegCombine all ingredients in a large bowl. Mix well and store in an airtight container. Use within 6-8 months. Makes 11 cups of muffin mix.
Apple Muffins
2 3/4 cups muffin mix (above)
1/2 cup chopped nuts (optional)
1/2 tsp ground cloves
2 cups grated apples
1 egg, beaten
1/4 cup butter, melted
1 cup milk
additional melted butter
additional cinnamon/sugar mixturePreheat oven to 400 degrees. Prepare muffin pan by brushing with melted butter. In bowl, combine muffin mix, nuts and cloves (I left the nuts out). Combine apples, egg, butter and milk in a medium bowl. Add all at once to dry ingredients, and stir until just moistened – batter will be lumpy. Fill muffin pans 3/4 full, and bake 18-20 minutes until golden brown. Cool for a few minutes, then dip tops into 1) melted butter, followed by 2) a mix of cinnamon and sugar.
